Shrimp in Salted Egg Yolk

This recipe is inspired by one of my favorite dishes from Din Tai Fung, their salted egg shrimps. What sets apart Din Tai Fung’s salted egg shrimps from others is the crunch that the shrimp has and the overall flavor of the sauce.

Ingredients:

  • Shrimps, 250g (peeled, deveined)
  • Flour
  • Salted egg yolks (I used 3 in this recipe)
  • Minced garlic
  • Red chili, chopped
  • Green onion
  • Butter

This recipe is relatively easy, let’s start cooking!

First, we’ll coat the shrimps with flour.

And then fry it until it turns golden. This will help us achieve the crispiness we’re aiming for.

We’ll now cook the sauce. Fry the minced garlic in a generous amount of butter.

Once our garlic is slightly brown, we’ll add the salted egg yolks.

Continue mixing until the yolks and the butter are incorporated.

We’ll now add the red chilis and green onions.

After mixing, let’s now add the pre-fried shrimp.

Make sure to coat the shrimp fully with the salted egg yolk sauce.

And we’re done! I was really pleased with how this turned out, luckily I have everything documented 😅
