It feels nice to try new things – and this time, I tried making calamansi muffins! It is pretty easy to make and it is also a refreshing alternative to super sweet goodies I used to bake.
Ingredients
- ¾ cup flour
- ½ cup sugar
- ⅛ tsp salt
- ¼ cup melted butter
- 2 eggs
- 1 cup sugar
- ½ cup melted butter
- 1 tbsp calamansi zest
- 3 tbsp fresh calamansi juice
- 1 tsp baking soda
- ½ tsp salt
- 1 cup sour cream
- 2 cups flour
Procedure
While preparing the mixtures, preheat your oven to 375 F. And then start with the crumb topping mixture:
In a bowl, combine topping ingredients: flour, sugar, salt, and butter. Mix together with a spatula and set aside.
For the muffin mixture, beat eggs using an electric mixer for about 1-2 minutes until thick and frothy.
Add sugar and oil and continue to beat for about 1 to 2 minutes or until creamy. Add calamansi zest, juice, baking soda and salt.
Beat for about 1 minute. Add sour cream and beat until combined. Add the flour and stir until everything is incorporated.
After finishing the mixtures, line your muffin pans with paper cups and fill each cup with 3/4 of the muffin mixture.
And then, sprinkle the crumb topping mixture on top.
Bake for about 18-20 minutes or until a toothpick inserted in the center of muffin comes out clean.
Let the muffins cool for about 5-10 minutes before putting it in containers.
Ta-daaa, your calamansi muffins are now ready for boxing and giving away!
